Potato dumplings with caramelized onions

Dumplings are definitely one of the most popular side dishes. In this recipe, small potato dumplings are perfectly complemented by the spicy-sweet aroma of caramelized onions. Easy to prepare, delicious with roasts and stews.

Ingredients

Prepare the potatoes
1 kgPotatoes
Caramelize onions
2 piecesOnions
1 tbsp.Butter
2 tsp.Brown sugar
Form the dumplings and cook
100 gPotato starch
2 piecesEgg yolks
3 tbsp.Butter
SomeSalt
SomePepper
SomeNutmeg

Preparation steps

Prepare the potatoes

  1. Boil the potatoes, peel and press through a potato press.


Caramelize onions

  1. Peel and finely chop the onions
  2. Melt 1 tbsp butter in a pan and fry the onions until translucent.
  3. Pour the sugar over the onions and caramelize, stirring constantly, until they have taken on a nice brown color.


Form the dumplings and cook

  1. Mix the mashed potatoes, potato starch, egg yolk, caramelized onions and 1 tbsp butter.
  2. Season with salt, pepper and nutmeg and work into a dough.
  3. Bring salted water to the boil in a pan. Form 22 dumplings from the potato dough, place in the water and simmer for approx. 12 minutes. Remove and drain well.
  4. Heat 2 tablespoons of butter in a pan and fry the dumplings until golden brown all over.
