Potato dumplings with caramelized onions
Dumplings are definitely one of the most popular side dishes. In this recipe, small potato dumplings are perfectly complemented by the spicy-sweet aroma of caramelized onions. Easy to prepare, delicious with roasts and stews.

Ingredients
Prepare the potatoes
| 1 kg | Potatoes |
Caramelize onions
| 2 pieces | Onions |
| 1 tbsp. | Butter |
| 2 tsp. | Brown sugar |
Form the dumplings and cook
| 100 g | Potato starch |
| 2 pieces | Egg yolks |
| 3 tbsp. | Butter |
| Some | Salt |
| Some | Pepper |
| Some | Nutmeg |
Preparation steps
Prepare the potatoes
- Boil the potatoes, peel and press through a potato press.
Caramelize onions
- Peel and finely chop the onions
- Melt 1 tbsp butter in a pan and fry the onions until translucent.
- Pour the sugar over the onions and caramelize, stirring constantly, until they have taken on a nice brown color.
Form the dumplings and cook
- Mix the mashed potatoes, potato starch, egg yolk, caramelized onions and 1 tbsp butter.
- Season with salt, pepper and nutmeg and work into a dough.
- Bring salted water to the boil in a pan. Form 22 dumplings from the potato dough, place in the water and simmer for approx. 12 minutes. Remove and drain well.
- Heat 2 tablespoons of butter in a pan and fry the dumplings until golden brown all over.
