Let me explain a technical process that takes a whole week a little differently in my own words:
Imagine a huge stone oven that is submerged under water. In gentle undulations, the temperature rises and falls in fine increments to an accuracy of a tenth of a degree. After the meat has been carefully prepared by means of magnets, our meat floats in this oven, accompanied by sounds that also spread from the side in waves. The interplay of heat and cold has a special effect on the meat in the oven.
At the same time, harmonious music permeates every cell, so that the vibration carefully preserves the valuable meat juices in every single fiber.
This fascinating pre-cooking process is meticulously tailored to each individual piece of meat. Each prime cut requires different temperatures and music, and goes through 19 different stages of refinement, with the entire process taking more than a week.

This gentle refinement gives the meat an exceptional tenderness that goes far beyond conventional cooking methods. The vibrations permeate every cell in a harmonious beat, carefully preserving the precious juices in every single fiber and only unfolding their taste in the mouth.
