Preparation steps
Avocado-Mango-Salad
- Mix the passion fruit juice, mango juice, lime zest and lime juice, egg yolk, Dijon mustard and ½ teaspoon of salt with a hand blender, gradually pour in the oil in a fine stream and blend to a vinaigrette.
- Mix half of the vinaigrette with the lettuce or lettuce hearts and season with salt and pepper.
- Peel and dice the mango and avocado.
- Serve the salad, garnish with the diced mango and avocado and drizzle the remaining vinaigrette over the salad.
Chicken breast
Prepare the “Gentle Chick” chicken breast in the pan according to the instructions, leave to cool, cut into fine cubes and arrange on the avocado and mango salad.
