Pulled Pork Burger with chili mayonnaise & BBQ sauce
Hand on heart: homemade burgers taste best. Butter-tender pulled pork in a do-it-yourself bun, served with chili mayonnaise and sweet potato fries - the best recipe for discerning burger fans. Everyone grabs it with both hands!

Ingredients
Burger Buns
160 ml | Lukewarm water |
40 ml | Lukewarm Milk |
25 g | Sugar |
1 piece | Fresh yeast |
500 g | Flour |
10 g | Salt |
80 g | Butter |
1 piece | Egg |
1 tbsp. | White sesame seed |
Pulled Pork
1 piece | Pulled Pork "Teared Pork" |
Sweet Potato Fries
1 kg | Sweet potatoes |
8 tbsp. | Olive oil |
1 tbsp. | Sea salt |
Chili Mayonnaise
1 | Egg |
2 tsp. | Sambal olek (chili-based spice paste) |
1 tsp. | Fleur de Sel |
Juice of half a lime | |
1 tsp. | Sugar |
200 ml | Canola oil |
BBQ-Sauce
150 ml | Ketchup |
30 ml | Apple cider vinegar |
1 tbsp. | Worcester sauce |
1 tsp. | Smoked paprika |
100 g | Cane sugar (brown) |
1 tbsp. | Olive oil |
1 tbsp. | Tabasco |
1 tsp. | Salt |
0,5 tsp. | Cumin |
Preparation steps
Burger Buns
- Mix the water, milk and sugar, crumble in the yeast and mix well.
- Place the flour, salt, butter and egg in a large bowl, then add the yeast mixture and knead the dough well (at least 5 minutes). Add a little more water if necessary.
- Cover the dough with a damp cloth and leave to rise for approx. 2 hours.
- Then weigh out 10 portions of 90-100 grams each, knead briefly, “fold” and shape into round buns.
- Place the buns on a baking tray lined with baking paper, cover with a damp cloth and leave to rise for approx. 30 minutes.
- Brush with an egg-milk-water mixture, sprinkle with sesame seeds and bake in the middle of the oven at 200°C top/bottom heat for approx. 15-18 minutes.
Pulled Pork
- Prepare the pulled pork according to the cooking instructions.
Sweet Potato Fries
- Preheat the oven to 180 degrees fan and prepare a baking tray with baking paper.
- Peel the sweet potatoes and cut into strips approx. 1 cm thick and 7 cm long.
- Mix the olive oil and sea salt in a large bowl and rub into the sweet potatoes.
- Spread the sweet potato strips on the baking tray and after approx. 10 minutes, when they are already golden brown, turn them over and brown again for another 10 minutes.
- Serve hot.
Chili Mayonnaise
- Place all the ingredients except the rapeseed oil in a bowl and blend briefly with a hand blender.
- Then slowly add the oil and continue blending until you have a homogeneous mayonnaise.
BBQ-Sauce
- Mix all the ingredients in the pan, bring to the boil briefly and then simmer for approx. 10 minutes on the lowest heat.
- Add a little water if necessary.
- Serve cold or warm.
Arrange
- Cut the burger buns apart, fill with the finished butter-tender pulled pork, serve with sweet potato fries, BBQ sauce & mayonnaise and enjoy your home-made burger meal!
