Roast Pork with sauerkraut and bread dumplings

Roast Pork

Sauerkraut
15 ml | Oil |
150 g | Onion |
25 g | Brown sugar |
1 piece | Bay leaf |
5 g | Salt |
1 g | Coriander |
1 g | Kümmel |
1 g | Juniper berries |
500 g | Sauerkraut |
250 ml | Beef stock |
1 piece | Carrot, grated |
Crispy Sauerkraut (optional)
Oil for frying | |
500 g | Sauerkraut |
20 g | Parsley |
Bread Dumplings
250 g | Bread cubes |
275 ml | Milk |
200 ml | Cream |
2 | Eggs |
1 pinch | Salt |
Some | Pepper |
Some | Nutmeg |
1 twig | Thyme |
Arrange
350 ml | Gravy "Juice Royal" |
Preparation steps
Roast Pork
- Prepare pork roast Pork Royal according to instructions.
Sauerkraut
- Caramelize the oil, onion and sugar in a pan. This will take about 10 minutes .
- Grind the spices into a medium coarse mortar and fry for 20 seconds.
- Add the sauerkraut and beef stock and simmer for 10 minutes.
- Finely grate the potato into the cabbage and simmer for a further 20 minutes.
- Season to taste with salt and pepper.
- The cabbage should still be nice and crunchy.
Knuspriges Sauerkraut (optional)
- Das Öl auf 165°C erhitzen.
- In kleinen Mengen das Sauerkraut knusprig frittieren und auf Küchenpapier abfetten.
- Petersilie kurz frittieren und überm Sauerkraut verteilt servieren.
Bread Dumplings
- Place the bread cubes in a bowl.
- Heat the milk and cream to 70°C and stir in the eggs.
- Season the liquid with salt, pepper, nutmeg and thyme.
- Mix the bread cubes well with the liquid and leave to rest for 30 minutes.
- Shape into napkin dumplings, wrap in cling film and cover with aluminum foil.
- Cook in boiling water for 30 minutes.
Arrange
- Bring the Juice Royal gravy to the boil for 5 minutes, stirring constantly, and serve with the roast pork with cabbage and dumplings.
