Roast Pork with sauerkraut and bread dumplings

Sauerkraut
15 mlOil
150 gOnion
25 gBrown sugar
1 pieceBay leaf
5 gSalt
1 gCoriander

1 gJuniper berries
500 gSauerkraut
250 mlBeef stock
1 pieceCarrot, grated
Crispy Sauerkraut (optional)
Oil for frying
500 gSauerkraut

Bread Dumplings
250 gBread cubes
275 mlMilk
200 mlCream
2 Eggs
1 pinchSalt
SomePepper
SomeNutmeg

Preparation steps

Roast Pork

  1. Prepare pork roast Pork Royal according to instructions.


Sauerkraut

  1. Caramelize the oil, onion and sugar in a pan. This will take about 10 minutes .
  2. Grind the spices into a medium coarse mortar and fry for 20 seconds.
  3. Add the sauerkraut and beef stock and simmer for 10 minutes.
  4. Finely grate the potato into the cabbage and simmer for a further 20 minutes.
  5. Season to taste with salt and pepper.
  6. The cabbage should still be nice and crunchy.
    Knuspriges Sauerkraut (optional)
  1. Das Öl auf 165°C erhitzen.
  2. In kleinen Mengen das Sauerkraut knusprig frittieren und auf Küchenpapier abfetten.
  3. Petersilie kurz frittieren und überm Sauerkraut verteilt servieren.


Bread Dumplings

  1. Place the bread cubes in a bowl.
  2. Heat the milk and cream to 70°C and stir in the eggs.
  3. Season the liquid with salt, pepper, nutmeg and thyme.
  4. Mix the bread cubes well with the liquid and leave to rest for 30 minutes.
  5. Shape into napkin dumplings, wrap in cling film and cover with aluminum foil.
  6. Cook in boiling water for 30 minutes.


Arrange

  1. Bring the Juice Royal gravy to the boil for 5 minutes, stirring constantly, and serve with the roast pork with cabbage and dumplings.
