Surf and Turf Royal with garlic-lemon prawns & avocado-cucumber salad

Ingredients

Avocado cucumber salad
1/2 piececucumber
1 pieceavocado
1 tbspolive oil
1 tsplemon juice
somesalt
somepepper
somelettuce (optional, for garnish)
Garlic and lemon prawns
2 – 3 piecesKing prawns (peeled)
1small clove of garlic
1 tsplemon juice
1 tbspbutter or olive oil
somesalt
somepepper

Preparation steps

Avocado and cucumber salad

  1. Cut the cucumber and avocado into small cubes.
  2. Mix them with olive oil and lemon juice, season with salt and pepper and leave the salad to infuse in the fridge.


Prepare the meat

  1. Place the special cut of beef Beef Royal in the vacuum pack in warm tap water in the sink for 5-10 minutes. Cut open the bag, remove the meat, empty the liquid down the drain and wipe the meat dry with kitchen roll.
  2. Heat some butter in a pan and fry the Beef Royale on both sides for approx. 8 - 10 minutes.
  3. Then leave the meat to rest for approx. 5 - 10 minutes.


Garlic and lemon prawns

  1. Finely chop the garlic.
  2. Heat the butter (or olive oil) in a pan and fry the prawns with the garlic and lemon juice for 1 - 2 minutes on each side.
  3. Season with salt and pepper.


Serving

  1. Serve the beef royal with avocado and cucumber salad on a plate.
  2. Skewer the fried prawns onto the beef steak (if you like, you can also add a lightly fried cocktail tomato for an extra splash of colour) and enjoy the Surf and Turf Royal!
