Sweet potato puree with brown butter
Sometimes the simplest recipes are also the most delicious... Sweet potatoes, brown butter and milk are mashed into a deliciously creamy puree. Crispy fried sage leaves provide the extra flavor. Prepared in no time at all!

Ingredients
Brown butter and sage leaves
80 g | Butter |
2 tbsp. | Sage leaves |
Sweet potato puree
800 g | Sweet potatoes |
80 ml | Milk |
Some | Salt |
Some | Pepper |
Some | Nutmeg |
Preparation steps
Brown butter and sage leaves
- Melt the butter in a small pan and heat until it turns brown.
- Add the sage leaves and fry until crispy.
- Remove the sage and drain on kitchen paper.
- Pass the butter through a fine sieve.
Sweet potato puree
- Peel the sweet potatoes and cut into pieces.
- Boil in plenty of salted water until soft and strain.
- Mash the potatoes with the milk, brown butter, salt, pepper and nutmeg.
- Serve the sweet potato puree garnished with the crispy sage leaves.
