Sweet potato puree with brown butter

Sometimes the simplest recipes are also the most delicious... Sweet potatoes, brown butter and milk are mashed into a deliciously creamy puree. Crispy fried sage leaves provide the extra flavor. Prepared in no time at all!

Ingredients

Brown butter and sage leaves
80 gButter
2 tbsp.Sage leaves
Sweet potato puree
800 gSweet potatoes
80 mlMilk
SomeSalt
SomePepper
SomeNutmeg

Preparation steps

Brown butter and sage leaves

  1. Melt the butter in a small pan and heat until it turns brown.
  2. Add the sage leaves and fry until crispy.
  3. Remove the sage and drain on kitchen paper.
  4. Pass the butter through a fine sieve.

Sweet potato puree

  1. Peel the sweet potatoes and cut into pieces.
  2. Boil in plenty of salted water until soft and strain.
  3. Mash the potatoes with the milk, brown butter, salt, pepper and nutmeg.
  4. Serve the sweet potato puree garnished with the crispy sage leaves.
