Nowadays, conventional meat is sprayed with various additives, softeners, preservatives and colorants during production and/or pickled in them to make it more appealing in terms of color and longer shelf life, to artificially enhance the taste, to deceive our senses and to reduce production costs even further.

The fact that many of the more than 300 permitted chemical additives used can even cause enormous harm to our bodies is accepted!

How a bite of roast pork changed our lives...

Of all things, we were offered roast pork for our wedding rehearsal dinner. “Roast pork is either too greasy for us, the rind sticks unpleasantly to our teeth or the meat is really dry!”. We always agreed on the taste back then! After a long hesitation to even take a bite, we were suddenly disabused and had to throw our beliefs overboard. 

We wanted to find out how a roast pork could taste so good!

Time for research and investigation

Harald began to research meticulously. He studied ancient cooking techniques and natural preservation methods.

How did people in the Stone Age prepare their food, how did the Aztecs preserve their meat and what were snow cellars used for in ancient Rome?

In short: people took a lot of time, rounded off the taste with regional spices and extended the shelf life with natural salt, gentle processing steps and long-forgotten techniques.

Many of these ways of making meat naturally juicy, tender and long-lasting have been forgotten over time. In recent decades, however, our diet has changed dramatically. The natural taste of meat has been artificially achieved with flavor enhancers, the color of meat has been altered with dyes and chemical preservatives now dramatically extend the shelf life. Our senses are being deceived at the expense of our health!

For us, however, it was clear that good meat must be wonderfully convincing on its own. It is important to us that our two children know what real meat looks and tastes like. Under no circumstances do we want to deceive their natural sense of taste and of course only give them what we ourselves are 100% convinced of.

Launching the company

But there was nothing like this on the market. That's why we took the risk and started to make the meat world a better place with a small meat factory.

Our process works entirely without artificial flavour enhancers and color optimization.

Our motivation was to move away from the industrial processing of meat and bring old cooking traditions back to life! We tried to turn back time and completely rethink the entire preparation process. However, this euphoria came to an abrupt halt! For the industry and the authorities, we were dreamers who would never exist on the market. We were hobby chefs and inventors who knew nothing about the meat market and customer demand. The market was all about artificially created safety and a long shelf life. Our approach would be far too time-consuming, the purchase of raw ingredients far too expensive and the personnel costs - refining meat by hand - would not be financially viable. What's more, there would be no takers for meat without additives anyway. Who looks at the label and asks about “chemical helpers”?

... my grandfather used to say.” My stubbornness already prevailed when I was studying medical and health sociology. Where many claimed it was a breadwinner. Maybe breadless, but certainly not meatless! Of course in combination with my inventive husband, who loves to develop new technologies and only gets going when something just won't work.

My father-in-law Herbert already told me: “Harald has always had his own ideas! He is an inventor. Sometimes stubborn, but a good-hearted person”.

We didn't give up and, with the help of scientific studies on natural shelf life and innovative low-cooking methods, countless laboratory tests and a unique patented natural processing method, we fulfilled our dream. We also developed our own organic spice blends - without any additives or preservatives.

It's hard to imagine today how many suppliers immediately turned us down when we wanted to source salt without anti-caking agents, for example. The days of rice grains in salt would be over!

Who would have thought back then that Galileo would visit us and even broadcast its own report on our innovative procedure (click here for the report). I wish I had known that when I was spending nights without sleep and days with stomach pains.

Thanks to our process, we are now able to offer the natural, uncompromisingly honest taste of meat without long preparation times and cooking skills.
Yes, it takes us an extremely long time to prepare our products and we have a dramatically higher labor cost, but we can stand behind every bite of meat with a clear conscience!

For us, it's not about the quantity and non-stop availability of meat.
We prefer less, but traditionally without additives and with authentic flavors, without deceiving our innate senses.
