Roast duck with red cabbage, wild mushrooms & stewed apples

With this recipe, you can quickly conjure up an all-round autumnal feel-good dish that is a feast for the eyes and the palate. You can make the perfect roast duck “The Duke” in just 20 minutes! Delicious side dishes: red cabbage, wild mushrooms & stewed apples.

Ingredients

Roast Duck
Red cabbage
1 tbsp.Pork lard
1 pieceApple, finely diced
1 pieceOnion, finely diced
2 tsp.Sugar
1 pieceRed cabbage, shredded
2 tbsp.Red wine vinegar
500 mlStock or half stock, half red wine
2 piecesBay leaves
6 piecesJuniper berries
1 pinchSalt
SomePepper
Wild mushrooms
100 gBacon, diced
500 gWild mushrooms, cleaned & roughly chopped
1 pieceOnion, finely diced
1 pinchSalt
SomePepper
SomeHerbs of Provence
Stewed apples
2 piecesApples
1 tbsp.Butter
1 tbsp.Sugar

Preparation steps

Roast Duck

  1. Prepare the roast duck "The Duke" according to the cooking instructions.


Red cabbage

  1. Sauté the apple and onion (finely diced) in lard, add approx. 2 tsp sugar and caramelize briefly.
  2. Add the sliced red cabbage and cook briefly, then deglaze with vinegar and stock or stock and wine mixture.
  3. Add the bay leaves and juniper berries (preferably in a spice sieve), season with salt and pepper and cook for 30-45 minutes.


Waldpilze Wild mushrooms

  1. Fry the bacon cubes in a pan until crispy and then remove from the pan.
  2. Fry the mushrooms in the fat from the bacon.
  3. Allow the water to evaporate, add the onion cubes and season with salt, pepper and herbs.
  4. Just before serving, add the bacon again and fry briefly so that all the ingredients are hot again.


Stewed apples

  1. Peel the apples, remove the cores and cut into wedges. Heat the butter in a pan, fry the apple slices briefly, sprinkle in the sugar and allow to caramelize slowly. Turn the apples carefully.


Poultry sauce

  1. Bring the “Twitter Juice” gravy for poultry to the boil in a pan for 5 minutes, stirring constantly.



Serve the portioned roast duck together with the side dishes and the poultry sauce on plates and enjoy!
