Roast duck with red cabbage, wild mushrooms & stewed apples
With this recipe, you can quickly conjure up an all-round autumnal feel-good dish that is a feast for the eyes and the palate. You can make the perfect roast duck “The Duke” in just 20 minutes! Delicious side dishes: red cabbage, wild mushrooms & stewed apples.

Ingredients
Roast Duck
2 pieces | Roast Duck "The Duke" |
Red cabbage
1 tbsp. | Pork lard |
1 piece | Apple, finely diced |
1 piece | Onion, finely diced |
2 tsp. | Sugar |
1 piece | Red cabbage, shredded |
2 tbsp. | Red wine vinegar |
500 ml | Stock or half stock, half red wine |
2 pieces | Bay leaves |
6 pieces | Juniper berries |
1 pinch | Salt |

Wild mushrooms
100 g | Bacon, diced |
500 g | Wild mushrooms, cleaned & roughly chopped |
1 piece | Onion, finely diced |
1 pinch | Salt |
Some | Pepper |
Some | Herbs of Provence |
Stewed apples
2 pieces | Apples |
1 tbsp. | Butter |
1 tbsp. | Sugar |

Preparation steps
Roast Duck
- Prepare the roast duck "The Duke" according to the cooking instructions.
Red cabbage
- Sauté the apple and onion (finely diced) in lard, add approx. 2 tsp sugar and caramelize briefly.
- Add the sliced red cabbage and cook briefly, then deglaze with vinegar and stock or stock and wine mixture.
- Add the bay leaves and juniper berries (preferably in a spice sieve), season with salt and pepper and cook for 30-45 minutes.
Waldpilze Wild mushrooms
- Fry the bacon cubes in a pan until crispy and then remove from the pan.
- Fry the mushrooms in the fat from the bacon.
- Allow the water to evaporate, add the onion cubes and season with salt, pepper and herbs.
- Just before serving, add the bacon again and fry briefly so that all the ingredients are hot again.
Stewed apples
- Peel the apples, remove the cores and cut into wedges. Heat the butter in a pan, fry the apple slices briefly, sprinkle in the sugar and allow to caramelize slowly. Turn the apples carefully.
Poultry sauce
- Bring the “Twitter Juice” gravy for poultry to the boil in a pan for 5 minutes, stirring constantly.
Serve the portioned roast duck together with the side dishes and the poultry sauce on plates and enjoy!
