Chicken-Tonnato

In this recipe, we have made a delicious twist on the popular Italian “Vitello Tonnato” with succulent chicken breast. Served with spicy tuna sauce, anchovies, capers on a bed of tomatoes & garnished with fragrant herbs.

Ingredients

Tuna Sauce
1 canTuna
10 piecesCapers
1 pieceLemon, juice of a lemon
1 tsp.Lemon zest
1 tbsp.Olive oil
1 pieceAnchovy
40 gMayonnaise
100 gYoghurt
Arrange
4 piecesTomato
1 pieceSardine
SomeParsley, chopped

Preparation steps

Chicken breast

  1. Fry the “Gentle Chick” chicken breast fillets in the pan according to the instructions.
  2. Bring the “Twitter Juice” sauce to the boil in a pan and add the seared chicken breast fillets, then turn off the heat and leave to infuse for approx. 15 minutes.
  3. Remove the chicken fillets, cover and leave to cool. Keep the cooking stock for preparing the tuna sauce.


Tuna Sauce

  1. Drain the tuna and capers, blend finely with 60 ml of the cooking stock, lemon juice and zest, olive oil and an anchovy using a hand blender.
  2. Mix the mayonnaise and yogurt until smooth, add the tuna paste and mix with a whisk.


Arrange

  1. Slice the tomatoes and arrange on plates.
  2. Cut the chicken breast fillets into very thin slices and arrange on top of the tomatoes.
  3. Pour over the tuna sauce and garnish with parsley and an anchovy.
