Crispy Polenta Fries

Spicy, golden brown and crispy: these easy-to-prepare polenta sticks from the pan taste great for young and old and are much healthier than the usual chips. Our recipe makes delicious finger food - perfect as a side dish!

Ingredients

Cooking the polenta
400 mlWater
200 gPolenta
100 gParmesan, grated
1 tbsp.Butter
SomeSalt
SomePepper
SomeNutmeg
Polenta-Sticks
3 tbsp.Polenta, raw
2 tbsp.Butter
1 tbsp.Oil

Preparation steps

Cook the polenta

  1. Bring the water to the boil and stir in the polenta.
  2. Simmer for approx. 10 minutes while stirring.
  3. Remove the polenta from the heat, stir in the Parmesan and butter.
  4. Season with salt, pepper and nutmeg.
  5. Cover the polenta and leave to soak for approx. 10 minutes.
  6. Cover a flat dish (e.g. baking tray, oven dish, board) with cling film. Spread the polenta on top and leave to cool for approx. 1 hour.

Fry the polenta fries

  1. Cut the polenta into sticks and sprinkle with raw polenta.
  2. Heat the butter and oil in a pan.
  3. Fry the polenta fries until golden brown all over.
  4. Remove and place on a wire rack.

Make sure you fry the polenta fries in several batches. If the pan is too full, it will be difficult to fry them until crispy and they will break.
