Pulled Pork Caramel Pear Burger

Bacon Beans
10 slices | Bacon |
3 pieces | Shallots |
200 g | Kenya beans (green beans) |
Caramel Pears
1 tbsp. | Sugar |
1 tsp. | Honey |
1 piece | Pear |
40 ml | White wine |
1 twig | Thyme |
1 pinch | Salt |
Sour Creme
6 tbsp. | Sour cream |
2 tbsp. | Crème fraîche |
1 tbsp. | Chives |
Some | Garlic |
1 pinch | Salt |
Some | Pepper |

Preparation steps
Pulled Pork
- Portion the pulled pork and prepare according to the instructions.
Bacon Beans
- Cut the pancetta into thin strips and fry slowly in a pan until the fat has rendered and the bacon is very crispy - this is called rendering. Then drain on kitchen paper and set aside.
- Next, peel and finely chop the shallots and sauté in a little oil in the same pan.
- Clean the kenia beans (a fine subspecies of green beans) and add to the shallots in the pan. Cook slowly at a low temperature so that they are still firm to the bite.
- Add the rendered bacon at the end.
Caramel Pear
- Caramelize the sugar in a pan and then add the honey.
- Peel the pear, cut into wedges, add to the honey caramel and toss briefly.
- Deglaze with white wine. Add the thyme and salt and simmer gently until the pear slices are nicely caramelized.
Sour Creme
- Mix the sour cream, crème fraîche and chives, season with garlic, salt and pepper.
Arrange the Burger
- Cut the burger buns open and briefly toast the cut surfaces or fry in a pan with a little oil until golden brown.
- Spread sour cream on both burger halves.
- Drape the bacon beans on the bottom burger halves and spread the finished pulled pork evenly on top.
- Garnish with the caramelized pear slices and place the tops of the burger buns on top.
