Pig Wing with bean and date chorizo and sweet potato

A great dinner-for-two is guaranteed with this simple but sophisticated recipe. Pig wings, juicy and tender “meat on a stick”, briefly finish in the oven and serve on a spicy and fruity cream made from beans, dates and chorizo.

Ingredients

Pig Wings
Sweet potatoes
2 piecesSweet potao
SomeOlive oil
Dates Chorizo Creme
50 gChorizo, finely diced
50 gDates, finely diced
Juice of a lime
Juice of one orange
100 mlWater
1 tbsp.Parsley, chopped
1 pinchSalt
SomePepper
Beans
2 tbsp.Hazelnut oil
50 gCarrots, finely diced
50 gParsley root, peeled, finely diced
1 pieceOnion, finely diced
120 gBeans
350 mlGravy for poultry "Twitter Juice"
1 tsp.Dijon mustard
1 pinchSalt
SomePepper
3 tbsp.Balsamico vinegar
1 tbsp.Hazelnut oil to taste

Preparation steps

Pig Wings

  1. Prepare the Pig Wings “Big Win” according to the instructions.


Sweet Potatoes

  1. Preheat the oven to 200°C.
  2. Wash the sweet potatoes and cut into slices approx. 5 cm thick.
  3. Place the sweet potato slices on a baking tray and drizzle with a little olive oil.
  4. Bake in the middle of the oven for approx. 30 minutes until they are nice and soft.


Dates Chorizo Creme

  1. Bring all the ingredients - except for the parsley - to the boil briefly, cover and leave to soak for 15 minutes.
  2. Finely puree the mixture with a hand blender or in a food processor. If the mixture is too firm, add a spoonful of water.
  3. Pass through a sieve and mix in the parsley.
  4. Season to taste with salt and pepper.


Beans

  1. Heat the hazelnut oil in a small pan and sauté the carrots, parsley roots and onion until translucent.
  2. Add the beans and “Twitter Juice” poultry sauce, cover and cook over a medium heat for 15 - 20 minutes until the beans are al dente.


Arrange

  1. Drain the beans briefly in a sieve, heat, season with mustard, salt, pepper, balsamic vinegar and oil and arrange on plates.
  2. Warm the date and chorizo cream slightly and spread over the beans.
  3. Place the sweet potatoes and pork wings on the plates and serve.
