Pig Wing with bean and date chorizo and sweet potato
A great dinner-for-two is guaranteed with this simple but sophisticated recipe. Pig wings, juicy and tender “meat on a stick”, briefly finish in the oven and serve on a spicy and fruity cream made from beans, dates and chorizo.

Ingredients
Pig Wings

Sweet potatoes
2 pieces | Sweet potao |
Some | Olive oil |
Dates Chorizo Creme
50 g | Chorizo, finely diced |
50 g | Dates, finely diced |
Juice of a lime | |
Juice of one orange | |
100 ml | Water |
1 tbsp. | Parsley, chopped |
1 pinch | Salt |
Some | Pepper |
Beans
2 tbsp. | Hazelnut oil |
50 g | Carrots, finely diced |
50 g | Parsley root, peeled, finely diced |
1 piece | Onion, finely diced |
120 g | Beans |
350 ml | Gravy for poultry "Twitter Juice" |
1 tsp. | Dijon mustard |
1 pinch | Salt |
Some | Pepper |
3 tbsp. | Balsamico vinegar |
1 tbsp. | Hazelnut oil to taste |
Preparation steps
Pig Wings
- Prepare the Pig Wings “Big Win” according to the instructions.
Sweet Potatoes
- Preheat the oven to 200°C.
- Wash the sweet potatoes and cut into slices approx. 5 cm thick.
- Place the sweet potato slices on a baking tray and drizzle with a little olive oil.
- Bake in the middle of the oven for approx. 30 minutes until they are nice and soft.
Dates Chorizo Creme
- Bring all the ingredients - except for the parsley - to the boil briefly, cover and leave to soak for 15 minutes.
- Finely puree the mixture with a hand blender or in a food processor. If the mixture is too firm, add a spoonful of water.
- Pass through a sieve and mix in the parsley.
- Season to taste with salt and pepper.
Beans
- Heat the hazelnut oil in a small pan and sauté the carrots, parsley roots and onion until translucent.
- Add the beans and “Twitter Juice” poultry sauce, cover and cook over a medium heat for 15 - 20 minutes until the beans are al dente.
Arrange
- Drain the beans briefly in a sieve, heat, season with mustard, salt, pepper, balsamic vinegar and oil and arrange on plates.
- Warm the date and chorizo cream slightly and spread over the beans.
- Place the sweet potatoes and pork wings on the plates and serve.
