Red cabbage with oranges
Red cabbage, the classic side dish for goose and duck, is given a particularly fruity note with oranges. The recipe is very easy to prepare: The red cabbage simmers away - the side dish comes together with an extra vitamin C kick without much effort.

Ingredients
Prepare the red cabbage and oranges
1 kg | Red cabbage |
3 pieces | Oranges |
Some | Salt |
Cook the orange red cabbage
2 pieces | Onion |
2 tbsp. | Butter |
100 ml | Vegetable stock |
2 pieces | Bay leafs |
Season to taste and garnish
Some | Salt |
Some | Pepper |
2 pieces | Oranges |
2 tbsp. | Cranberry jam |
Preparation steps
Prepare the red cabbage and oranges
- Clean and finely chop the red cabbage.
- Halve and squeeze 3 oranges.
- Season the cabbage with salt and mix briefly with the orange juice.
- Stir in the squeezed oranges.
- Cover the cabbage and leave to stand - preferably overnight.
Cook the orange red cabbage
- Remove the squeezed oranges from the cabbage.
- Peel and finely chop the onions.
- Melt the butter in a pan and sauté the onions in it.
- Add the red cabbage, vegetable stock and bay leaves.
- Cover and simmer for approx. 40 minutes.
Serve and garnish
- Remove the red cabbage from the heat, season with salt and pepper.
- Peel 2 oranges and cut out the fillets.
- Garnish the red cabbage with the filleted orange slices and marmalade.
Tip: Also delicious with pre-cooked chestnuts!
