Ingredients

Grill the eggplants
2 piecesAubergines
80 mlOlive oil
2 clovesGarlic (pressed)

Preparation steps

Grill the eggplants

  1. Cut the eggplants lengthways into the thinnest possible slices.
  2. Salt both sides and leave to marinate for approx. 20 minutes.
  3. Pat the slices dry.
  4. Mix the olive oil and garlic.
  5. Brush the eggplant slices with the mixture and grill on both sides.

Stuff and garnish the eggplant rolls

  1. Portion the pre-cooked pulled pork, roast briefly and shred.
  2. Fill the grilled eggplants with pulled pork and roll up.
  3. Drizzle with the chimichurri sauce (you can find the recipe for chimichurri here)
