Ingredients
Grill the eggplants
2 pieces | Aubergines |
80 ml | Olive oil |
2 cloves | Garlic (pressed) |

Preparation steps
Grill the eggplants
- Cut the eggplants lengthways into the thinnest possible slices.
- Salt both sides and leave to marinate for approx. 20 minutes.
- Pat the slices dry.
- Mix the olive oil and garlic.
- Brush the eggplant slices with the mixture and grill on both sides.
Stuff and garnish the eggplant rolls
- Portion the pre-cooked pulled pork, roast briefly and shred.
- Fill the grilled eggplants with pulled pork and roll up.
- Drizzle with the chimichurri sauce (you can find the recipe for chimichurri here)
