Ingredients

Marinade
100 mlRice vinegar
15 gSalt
5 mlMirin (rice wine)
30 gSugar
2 cm Konbu seaweed
Rice
360 gSushi rice
450 mlWater
Suitable fillings and completion
6 piecesSoft tortillas
1 pieceVeal Shank "Great Peak" portioned
1 pieceAvocado
1 bunchSpring onions
SomeChili

Preparation steps

Marinade

  1. Heat the rice vinegar gently.
  2. Add the salt, mirin (rice wine), sugar and seaweed and stir until the sugar and salt have dissolved. Then cover the pan with foil and leave to infuse for approx. 2 hours.


Rice

  1. Wash the rice until the water runs clear.
  2. Place the rice and water in a rice stove and steam.
  3. Place the rice in a large bowl and carefully work in the marinade with a rubber spatula.
  4. Leave the rice to cool for 10 minutes and cover with a cloth.


Completion and suitable fillings

  1. Toast the tortilla wraps briefly in a hot pan.
  2. Halve the avocado, remove the stone, remove the flesh from the skin and cut into small cubes.
  3. Cut the spring onion into thin rings.
  4. Cut the “Great Peak” veal into fine cubes.
  5. Spread the sushi rice evenly on the toasted wraps and top with the vegetables and veal.
  6. Roll up the tortillas and enjoy!
