Prepare the meat

  1. Unpack the Great Peak veal, fry briefly on both sides, let cool and cut into very thin slices across the grain.


Tuna Sauce

  1. Drain the tuna and capers, puree them together with lemon juice and zest and anchovies using a hand blender to form a fine paste. Gradually mix in the olive oil.
  2. Mix the mayonnaise and yogurt until smooth, slowly add the tuna paste and mix with a whisk. Season with salt and pepper.

    Tip: Save the tuna and caper juice when draining! If the tonnato seems too thick, you can use the juice to thin the sauce.
