Johann Lafer's Red Cabbage

Ingredients

Red Cabbage
1 kgRed cabbage
250 gApples
2 piecesOnion, red
2 tbsp.Agave syrup or honey
SomeBlackcurrant jelly
100 gApple puree
1 pinchSalt
SomePepper
For the tea infuser
1 piecesCinnamon stick
2 piecesCloves
1 pieceBay leaves
2 piecesJuniper berries
10 piecesPeppercorns, white

Preparation steps

Red cabbage

  1. Halve the red cabbage, place in the juicer together with the apples and red onions and collect the juice in a container.
  2. Chop or slice the remaining red cabbage.
  3. Melt the honey (agave syrup) in a pan together with the redcurrant jelly. Then add the apple sauce and the chopped red cabbage.
  4. Pour in the liquid from the juicer and season with salt and pepper.

Spices for the tea infuser

  1. Pour the spices into the tea infuser and add to the red cabbage, bring everything to the boil until the red cabbage is soft. Remove the tea infuser before serving.
