Duck Leg with sweet potato puree and melted tomatoes

Ingredients

Duck Leg
Sweet potato mash
2 piecesSweet potatoes (approx. 600g)
100 mlMilk
1 tbsp.Butter
SomeSalt
SomePepper
SomeNutmeg
Melted Tomatoes
300 gColorful cocktail tomatoes
2 clovesGarlic
2 tbsp.Olive oil
SomeSalt
SomePepper
Somegrated lemon zest
SomeBasil leaves, 1 handful

Preparation steps

Duke Leg

  1. Prepare the “Duke Leg” duck legs according to the instructions.


Sweet potato mash

  1. Peel and roughly dice the sweet potatoes.
  2. Cook in plenty of water, drain through a sieve and leave to drain.
  3. Mash with milk and butter.
  4. Season to taste with salt, pepper and nutmeg.
  5. Keep warm over a bain-marie.


Melted tomatoes

  1. Halve the tomatoes or leave them whole, depending on their size.
  2. Peel and finely chop the garlic and sauté in olive oil.
  3. Add the tomatoes and simmer over a low heat for approx. 8 minutes.
  4. Season with salt, pepper and lemon zest.
  5. Remove from the heat and mix in the basil leaves.


Arrange

  1. Arrange the sweet potato puree on plates, place the duck legs on top and serve garnished with the melted tomatoes.
