Ingredients
Duck Leg
4 pieces | Duck Leg "The Duke Leg" |
Sweet potato mash
2 pieces | Sweet potatoes (approx. 600g) |
100 ml | Milk |
1 tbsp. | Butter |
Some | Salt |
Some | Pepper |
Some | Nutmeg |
Melted Tomatoes
300 g | Colorful cocktail tomatoes |
2 cloves | Garlic |
2 tbsp. | Olive oil |
Some | Salt |
Some | Pepper |
Some | grated lemon zest |
Some | Basil leaves, 1 handful |
Preparation steps
Duke Leg
- Prepare the “Duke Leg” duck legs according to the instructions.
Sweet potato mash
- Peel and roughly dice the sweet potatoes.
- Cook in plenty of water, drain through a sieve and leave to drain.
- Mash with milk and butter.
- Season to taste with salt, pepper and nutmeg.
- Keep warm over a bain-marie.
Melted tomatoes
- Halve the tomatoes or leave them whole, depending on their size.
- Peel and finely chop the garlic and sauté in olive oil.
- Add the tomatoes and simmer over a low heat for approx. 8 minutes.
- Season with salt, pepper and lemon zest.
- Remove from the heat and mix in the basil leaves.
Arrange
- Arrange the sweet potato puree on plates, place the duck legs on top and serve garnished with the melted tomatoes.
