Beef bone steaks with pea guacamole and beet tartare
BBQ meets fine dining! Juicy beef bone steaks, served with a fine beet tartare on a simply mixed pea guacamole - this sophisticated recipe creation for the “Big Beef Rib” is really something for barbecue gourmets!

Ingredients
| 1 piece | Short Ribs "Big Beef Rib" |
| 350 ml | Demi Glace "37 Hours" |
| 4 pieces | Red beets |
| 2 sprigs | Rosemary |
| 3 tbsp. | Olive oil |
| 2 tbsp. | Mustard |
| 3 tbsp. | Soy sauce |
| 3 tbsp. | Peanut butter or sesame paste |
| 2 cloves | Garlic, chopped |
| Some | Vinegar |
| Some | Nutmeg |
| Some | Chili |
| 2 tbsp. | Beet water |
| 1 pinch | Salt |
| Some | Pepper |
| 500 g | Peas (frozen or fresh) |
| 3 tbsp. | Olive oil |
| 3 tbsp. | Lime juice |
| Some | Cumin |
| 2 cloves | Garlic |
| 1 pinch | Salt |
| Some | Pepper |
Preparation steps
Beef Bone Steaks from the grill
- Prepare the short rib big beef rib according to the instructions for the beef bone steaks (portion between the ribs) and place on the hot grill (160° C).
- Keep brushing the steaks with the Demi Glace 37 Hours and turning them until they are perfectly cooked - for approx. one hour.
Beet tartare
- Boil the beet with the rosemary sprigs in hot water (you can leave the beet skin on). This takes about 30-50 minutes, depending on the size of the tubers.
- Then remove the roots of the beet, cut the tubers into small cubes and serve with the dressing.
Tip: Keep the water in which the beet was cooked. It is perfect for refining the dressing.
Dressing
- Mix all the ingredients together and season with salt and pepper.
Pea guacamole
- Boil the peas in water and then leave to cool.
- Blend the peas with the olive oil, lime juice, cumin and garlic and season with salt and pepper to taste.
Left-over tip: If you have leftover meat, you can cut it into small pieces and wrap it with guacamole, vegetables and some salad to make a real gourmet burrito. “Perfect for using up leftovers the next day,” say Silvi and Kalle.
