Ingredients

1 piece | Kalbstafelspitz "Great Peak |
BBQ Sauce
350 ml | Demi Glace "37 Hours" |
1 EL | Zucker |
350 ml | BBQ-Sauce nach Belieben |
Preparation steps
Prepare the meat
- Place the Great Peak veal in the vacuum pack in hot tap water in the sink for 5-10 minutes. Cut open the bag, remove the meat and empty the liquid down the drain.
- Cut the veal into slices approx. 2.5 cm thick (across the grain) and skewer on wooden skewers (with the wider side facing down).
- Then fry the steak pops for approx. 5 minutes on each side on the barbecue at 240°C (indirect heat).
BBQ-Sauce
- While the steak pops are roasting on the grill, you can prepare the BBQ sauce. To do this, place all the ingredients in a saucepan and reduce for approx. 10 minutes while stirring.
- When the skewers are ready, simply pour the sauce over them and enjoy the juicy BBQ steak pops.
